Fruit jelly 

Fruit jellies are semisolid, preserved mixtures of fruit juice and sugar. Jelly making is a good way to preserve fruit flavors for enjoyment throughout the year. Fruit jelly is a fairly easy-to-prepare product for the beginning canner and may be made at home without much special equipment.
Jelly: Jelly is made with strained fruit juice. There are no pieces of fruit in jelly. Jam: Jam is made with mashed fruit. Preserves: Preserves have whole fruit or large pieces of fruit.
To make raspberry jelly, combine 5 1/2 pounds fresh berries (strained into 3 1/2 cups juice), ½ cup of water, 2 ½ cups sugar and ½ cup lemon juice. Bring to a boil, then reduce to low heat and simmer the liquid for 8-12 minutes until thickened, stirring constantly.
Research also shows that pectin may inhibit dangerous toxins produced by E. coli, a harmful bacteria ( 18 , 19 ). That said, even though jams and jellies may provide some benefits, they're high sugar products, and consuming too much sugar may lead to weight gain, cavities, heart disease, and type 2 diabetes ( 20 ).
