Refrigerators work by causing the refrigerant circulating inside them to change from a liquid into a gas. This process, called evaporation, cools the surrounding area and produces the desired effect. You can test this process for yourself by taking some alcohol and putting a drop or two on your skin.
The low temperature reduces the reproduction rate of bacteria, so the refrigerator lowers the rate of spoilage. A refrigerator maintains a temperature a few degrees above the freezing point of water. The optimal temperature range for perishable food storage is 3 to 5 °C (37 to 41 °F).
Fridges help preserve food by removing the heat from the inside of the appliance. In a similar manner to a freezer, a fridge uses the process of evaporation to keep food fresh. All fridges feature a compressor, which is a pump that compresses refrigerant in gas form.
