It is a tree that has a pleasant smell of cinnamon from all its parts. The spice of cinnamon is obtained by beating the young branches and trunk of the tree. Cinnamon tree does not exist in Iran and is native to Sri Lanka and South India. To prepare cinnamon, the bark of this shrub is removed and usually powdered and used in food or tea.
In Iran, it is widely used in confectionery in the form of extract, essential oil and powder, and it is one of the main components of mixed spices.
Cinnamon powder is used to decorate the yellow sholeh and halim, especially the offering food.
